Dana Francisco grew up in a military family, moving frequently before settling in Texas, where his first kitchen job sparked his passion for cooking. After high school, he abandoned plans to enlist and instead attended the San Diego Culinary Institute, later gaining experience at top restaurants and luxury hotels, including the Four Seasons in Hawaii. Seeking more creative freedom, he returned to independent restaurants and reconnected with chef Gabriel Rucker in Portland during the COVID-19 pandemic. Now, as chef de cuisine at Canard, Francisco embraces seasonal cooking, working closely with local foragers and showcasing Oregon’s prized truffles.
