Thomas Pisha-Duffly is the Owner and Executive Chef behind Portland’s beloved dining destinations, Gado Gado and Oma’s Hideaway. A recent James Beard Award semi-finalist for Best Chef Northwest & Pacific, Tom has earned recognition for his bold, heartfelt approach to cuisine. Born and raised in Cambridge, Massachusetts, his culinary journey began in some of New England’s most esteemed kitchens, including East Coast Grill, Hugo’s, and Barbara Lynch’s Sportello. However, it was a transformative trip to Indonesia that reconnected him with his roots and inspired the vision for Gado Gado—a tribute to his Southeast Asian heritage and the cherished recipes of his grandmother. Tom’s cooking is deeply personal, woven with memories, culture, and a dedication to crafting dishes that evoke a sense of nostalgia and connection.
We’re excited to learn some fine technique work from Tom as he demonstrates the proper method for cutting supremes from oranges and kumquats. He’ll use those beautiful citrus segments as he creates a Konbu Cured Scallop Crudo for us to savor together.
